Here is a recipe that is tasty, and best of all easy to put together.
Mexican Rice
Food From the Heart
- 2 cups uncooked rice
- 1 bell pepper (optional)
- 1 small onion
- ¼ cup butter
- ½ cup tomato sauce
- 3 cups chicken broth
- 1 tsp garlic powder
- 1 tsp cumin
- 1 tsp salt
- Spray 9×13 pan.
- If using a rice cooker, or instant pot, just pile in the ingredients and get it going
- Rinse rice well (keeps it from getting sticky). Spread in bottom of pan.
- Sprinkle diced pepper & onion over rice. Cut butter in small pats.
- Pour tomato sauce & broth over rice.
- Sprinkle on seasoning.
- Cover tightly with foil. Bake.
- Let sit uncovered a few minutes. Fluff with a fork.
Leftovers can be frozen. Let cool completely to room temperature. Crumble with fingers. Put in Ziploc bags. Squeeze out air and freeze. Thaw at room temperature
