Need some rice to go along with Chicken Enchiladas or Grilled Chicken?

Here is a recipe that is tasty, and best of all easy to put together.  

Mexican Rice

Food From the Heart

  • 2 cups uncooked rice
  • 1 bell pepper (optional)
  • 1 small onion
  • ¼ cup butter
  • ½ cup tomato sauce
  • 3 cups chicken broth
  • 1 tsp garlic powder
  • 1 tsp cumin
  • 1 tsp salt
  1. Spray 9×13 pan.
  2. If using a rice cooker, or instant pot, just pile in the ingredients and get it going
  3. Rinse rice well (keeps it from getting sticky).  Spread in bottom of pan.
  4. Sprinkle diced pepper & onion over rice.  Cut butter in small pats.
  5. Pour tomato sauce & broth over rice.
  6. Sprinkle on seasoning.
  7. Cover tightly with foil. Bake.
  8. Let sit uncovered a few minutes. Fluff with a fork.

Leftovers can be frozen.  Let cool completely to room temperature. Crumble with fingers. Put in Ziploc bags. Squeeze out air and freeze. Thaw at room temperature
